I found this hemp recipe on Pinterest that I am going to try, but not until June! I am going to make them as part of our PotLuck Picnic for NORML as we celebrate "Free Fishing Day in Wisconsin" with the State Department of Natural Resources. (Everyone always likes the hemp treats!)
There is a symbiosis that occurs when making macaroons… they want to be paired with the making of an egg yoke recipe; like hollandaise sauce or egg noodles. The same day I made these I made lovely squash stuffed raviolis and cannelloni with home-made egg noodles and knew that those pasta dough egg whites were destine for great things.
These macaroons are a fail proof recipe that creates fluffy sticky toasty pillows of coconutty hemp goodness, with just a few easy ingredients:
essential cookie element 3: cookies should be quick and easy, not fussy. Something you can throw together on a whim.
In a stand mixer whip:
the whites of 6 eggs just beyond soft peaks… on the threshold of stiff but certainly not hard peaks.
In a large bowl combine:
1 cup organic cane sugar
2 cups organic fancy shred coconut
1 cup organic hemp hearts
along with a pinch of sea salt and a splash of vanilla
gentally fold egg white peaks into bowl of coconut, until combined.
Portion cookies on to a lined baking sheet and bake at 350 for 12 minutes.
They are ready when golden brown along the edges and have some highlights of golden bits of top.
